CRAFTSENSE

Project

CRAFTSENSE aims to improve quality monitoring in craft wine and beer fermentation through an affordable system combining low-cost sensing, adaptive calibration, Edge-AI, predictive analytics and digital decision support. By monitoring key parameters such as Total Acidity (TA), Volatile Acidity (VA) and fermentation density, the project will enable earlier detection of deviations and support more timely, data-driven interventions.

The integrated solution will convert sensing and predictive outputs into clear operational recommendations through user-friendly digital interfaces, supporting a shift from reactive to predictive and preventive fermentation management. It will be validated in real winery and brewery environments in Greece and Spain, while MSCA Staff Exchanges will strengthen knowledge transfer among researchers, technology SMEs and fermentation producers.
